The Ancient Salamanther mount can drop from any of the new rares from the Forbidden Reach, which is the new zone added to WoW Dragonflight 10.0.7.
The respawn for all of the rares is fairly quick. However, once you have participated in each of the rares they will no longer show up on your map. Therefore it is possible you only have one chance per rare spawn at obtaining the Ancient Salamanther mount.
You could also use other characters to have multiple chances of obtaining the mount each day.
